1 large ripe avocado
1-2 cloves of garlic, crushed
¼-1/2 tsp. of sea salt (personal taste)
Black pepper to taste
Juice from 1/2 lemon
5 tbsp. extra virgin olive oil (more if larger salad)
½ tsp. dried oregano, turmeric, coriander or basil (optional)
Remove seed from avocado and scoop the contents into a large bowl. Mash with a fork until soft and creamy. Add lemon juice, salt, pepper, spices, crushed garlic and olive oil and mix with fork or spoon.
Add salad ingredients of choice such as spinach/lettuce/ veggies to bowl and toss. Makes 6 side salads. Enjoy!
